I want to know what will happen when one phase is suddenly open in three phase induction motor and what can i do then

Turn off your motor.
You motor will be "single phasing". If already turning it may continue to turn if the load is very light, but will quickly overheat and damage the windings. If the load is too heavy for the extreme loss of torque when single phasing, the motor will stop and you will get high current on the other 2 phases, but possibly not high enough to blow fuses or open a circuit breaker fast enough to protect the windings.
